I want to make a cake, but what kind for Christmas. I'm kinda tired of pies. Like chocolate, so anything with that would be good.

I was thinking no pies this time too. I plan to make the "cherries in the snow" dessert in this forum somewhere and just buying a Santa cake from Wal-mart.

make a chocolate eclair cake. layer graham crackers on the bottom of a cake pan, and then layer with vanilla (or banana) pudding mixed with cool whip, then layer graham crackers, then pudding and then the last layer of graham crackers layer with chocolate, (i used chocolate fudge icing!) very simple easy and delicious!

I make the same cake every year and DH likes it so much he has it as his bday cake too!

Boxed Chocolate cake mix
2 small cartons of heavy cream
1/2 cup white sugar (or powdered sugar-whatever you use to make whipped cream, I use the white sugar)
candy canes
one hershey chocolate bar

Bake cake as directed on package for the two round layers. Cool
Crush candy canes - you can use a food processor if you have one
Beat the heavy cream and and gradually add the white sugar until it's thick and fluffy. Make sure you taste for sweetness. You can add more if you need it.
Mix crushed candy canes with whipped cream and spread on bottom layer of the cake, top with second layer and frost the top.
Use a veggie peeler to make chocolate curls with the chocolate bar to garnish the top. Refrigerate till serving.
It's so yummy and it looks really pretty.

yummm adriana that sounds sooooo good. Where Eric used to work one of his boss' wife would make a peppermint ice cream pie and I LOVED it. It had peppermint ice cream topped with some chocolate gooeyness that was goooood and crushed candy canes were sprinkled on top. I cant remember the crust, think maybe it was just a chocolate crust? Anyway, I miss him working there for that pie alone so was just thinking a cake similar would be good.

No kidding Lorna! lol It's 8:30 here and I havent' even had breakfast! lol

I've been wanting to try PW's best chocolate cake ever....might just do that this week...I think i have all the stuff..
