VELVEETA Cheesy Chicken Skillet



Prep Time: 10 min
Total Time: 35 min
Makes: 4 servings, 1-1/4 cups each




1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 pkg. (12 oz.) VELVEETA Shells & Cheese Dinner
1 cup milk
1 cup water
1 cup broccoli florets
1 cup sliced carrots



COOK chicken in large skillet sprayed with cooking spray on medium-high heat 5 min. or until cooked through, stirring occasionally.
ADD Shells, milk and water; stir. Bring to boil. Reduce heat to medium-low; cover. Simmer 10 min. Add broccoli and carrots; stir. Cook, covered, 5 min. Remove from heat.
STIR in VELVEETA Sauce.

Chicken-Vegetable Quesadillas



Serving: 4
Prep Time: 30 minutes
Cook Time: 10 minutes
Total Time: 40 minutes



Nonfat cooking spray
8 flour tortillas
1 cup cooked and diced chicken tenders
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1 cup corn kernels or canned corn
2 cups Mexican tomatoes and jalapenos, drained
1 (12-oz) jar roasted peppers, drained



1. Preheat oven to 450 degrees F.

2. Line baking sheets with foil and lightly spray with nonfat cooking spray.

3. Place tortillas in single layer on baking sheets.

4. Sprinkle each tortilla with 1/4 cup chopped chicken, 1/4 cup Monterey Jack cheese, 1/4 cup cheddar cheese, 1/4 cup corn kernels, 1/2 cup tomatoes, and several slices red pepper; top with remaining cheese and remaining tortillas.

5. Bake in preheated oven 8 to 10 minutes, until cheese is melted and tortillas are lightly browned.
