I plan to start buying more veggies, especially the ones "in season" what ever the season is.

Anyone have tasty recipes for veggies? Either using as the main dish or a nice side?

I seem to make all my veggies mushy, so could use some help.

Their is a corn casserole on Pioneer woman. com that I have tried before that was good. I like to fry zuchinni though that is not a really healthy form for the veggie....but I find it nice once in a while.
I love carrots in a roast gravy....I could eat a whole pan!


When I can't get fresh veggies in season I love the steam and serve or something....they are so good...their corn niblets are yummy!!

I've been wanting to find some recipes for zuchini besides frying....

And I'm willing to try other's too...

I think frying may be the only way I would eat many veggies, LOL I am trying to be good and find better ways.

I make brown sugar carrots by cooking the carrots in water till slightly tender, drain water, add a tbls butter and a few tbls brown sugar, coat and cook a few minutes...they are yummy! tastes like cracker barrel

Sometimes I cook broccoli in a little sesame oil and garlic and a bit of soy sauce.

I love the steam fresh veggies from birds eye. They have some that are seasoned. We get the Asian Medley alot.

We like veggies in our house.

I make a corn casserole thingie
1 can cream corn
1 can regular corn drained
1 stick of butter
1 box jiffy corn bread
1 cup sour cream
1 egg

mix and put in square pan. Bake for about an hour at 350. Its very yummy.

We cook spinach too. I put a little olive oil in the pan, add spinach, garlic and lemon juice and cook until wilted. Its yummy!
