I Have Too Much Spare Time

My mom made this for us when she was here right after Amelia was born. It was so easy and quick. We made it early in the day and stuck it in the fridge until we were ready to cook it. I hate black beans, but this was sooooo good!

Fiesta Shrimp

3/4 pound Fresh shrimp -- peeled and deveined
1 tablespoon olive oil
2 teaspoons Creole seasoning -- Divided
1 large red bell pepper -- chopped
1/2 cup corn -- fresh or frozen-thawed
1/2 cup Mexican blend cheese -- grated
2 tablespoons fresh cilantro -- minced
1 can black beans -- drained
rice

Place peeled and deveined shrimp on the center of a 24 X 18 inch sheet of heavy duty aluminum foil. Drizzle with oil and sprinkle with 1 teaspoon Creole seasoning, tossing to coat.

Sprinkle bell pepper and next 3 ingredients over shrimp; top with black beans and remaining 1 teaspoon Creole seasoning.

Fold opposite edges of foil together over shrimp; crimp and fold remaining edges to seal.

Place packet in oven and bake at 375 degrees for 35 minutes. Serve over rice.
